Light Mackerel Pâté Whizz one part smoked mackerel (I like the peppered kind) and one part cottage cheese in a food processor for a few seconds until combined. Add a squeeze of lemon juice and some chopped parsley. Done.

Spiced Onion Crusted Chicken
Posted in Food, Recipes, tagged chicken, healthy, Indian, low-fat on June 17, 2011 | 11 Comments »
I love chicken with the skin on, all crispy and juicy and tender. Love it. Don’t love the extra calories though and that’s why I do love the following recipe. Based on a Madjur Jaffrey recipe, these chicken legs and thighs are thickly coated in a spiced onion mixture and roasted until crispy. The onions [...]
Aloo Matar

“Aloo” is the hindi word for potato. So popular is aloo gobi (Indian spiced potatoes with cauliflower) and aloo saag (with spinach) in the UK that the word “aloo” has recently been entered into the official Scrabble dictionary. That tickles me. Aloo matar is my favourite of the aloo dishes and this is how I [...]
Garlic, Chilli & Parsley Tagliatelle

I’m feeling a little delicate today. It was D’s sister’s Hen do yesterday. There were quad bikes, there was a salsa lesson, there were tapas and there was sangria, champagne and wine. It was fabulous but, man, am I suffering for it today. Dinner had to be simple tonight. And so it was. Taglietelle with [...]
Broth

So, I’m calling this “broth” partly because I love the sound of the word, and partly because that’s what this soup (or variations of it) is called where I grew up in Aberdeenshire. My family (originally from the Glasgow area) call this “homemade soup”. One could make, lets say, carrot and coriander soup from scratch [...]
Roasted Vegetables (Staple # 2)

Much like my recipe for garlic butter, I was very hesitant to share this idea for roasted vegetables. Not only are they something that I suspect many people make without giving much thought to, this isn’t exactly a seasonal dish. But roasting is a great way to liven up hothouse-grown peppers and we eat these every week without fail. I promised [...]
My Heaven: His Hell

D’s not a fussy eater but he does not like mushrooms at all and I don’t think there is a verb strong enough to express his loathing of blue cheese. I, on the other hand, love both and had an utterly divine lunch featuring both today. Can’t recommend it highly enough. Unless you are [...]
Beef & Broccoli

I’ve been cooking impromptu meals for friends and relatives quite often recently. No disasters to speak of but a few meals to be proud of. So that’s nice. On each occasion someone has usually asked if the recipe is on my blog and I’ve blushed (still very shy about talking about blogging in the “real” world) and [...]
Poppyseed & Vanilla Cake

There are words that make me happier just by saying them. Among these are the Scottish place names Beeswing, Wogle, Auchterarder and Mugiemoss; the animal names aardvark, moose and piglet; and the food names butterbean, nectarine and poppyseed. And quite frankly, my like of the word poppyseed was what possessed me to make the following [...]
Olive Bread

Home for a couple of days. As I drove into the village yesterday, this was the view that greeted me. Quite a welcome. And that was nothing in comparison to the welcome I got from my beloved pup, Marco. Think he missed me as much as I missed him. Treated him to sunny walk and [...]
